WORLD SUSHI CUP® JAPAN 2022: the Competition for the World's Best by non-Japanese Sushi Chef at Toyosu Market
World Sushi Cup® Japan 2022 took place at Tokyo Metropolitan Central Wholesale Market Toyosu Market on Friday, January 20th and Saturday, January 21st. World Sushi Cup® Japan welcomes non-Japanese Sushi chefs to demonstrate their highly skilled food sanitation management and cooking techniques for the chance to be crowned the world’s top Sushi chef. In 2022, World Sushi Cup® Japan celebrated its 10th anniversary with 19 contestants from 12 countries.
The Edo-mae Sushi Open Competition on the 20th was divided into three sessions, Shikomi (preparation), Otsukuri (raw-fish), and Nigiri (hand-pressed) to evaluate each contestant’s basic cooking procedures and techniques. Of the 19 contestants competing on the first day,
15 were chosen to advance to the Creative Sushi Open Competition on the next day, and they competed for the title of world's best.
