Rice flour crackers with dips

Ingredients 4 servings
Cream cheese 30g
Egg yolk 2U
Olive oil 15ml
Water 100ml
Rice flour 170g
Baking soda 2g
Dried oregano to taste
Salt to taste

For hummus

Cooked chickpeas 400g
Tahini 30g
Garlic 1 clove
Cumin powder 5g
Salt and paprika 2g
Olive oil 20ml
Water 50ml

For avocado cream

Avocado 1U
Olive oil 100ml
Salt and pepper to taste
Lime 1U

By using rice flour, you can enjoy crackers with a crispy texture. The slightly sweet, flat flavor enhances the taste of the dip.

How to make it

  • Beat the egg yolks with cheese cream, then add water

  • Add the Olive oil

  • Finally, add all the dry ingredients

  • Knead to a homogeneous mass

  • On a baking paper, spread the dough and make marks with the knife.

  • Bake at 180º for 15 minutes, until golden

  • Reserve

  • Blend the cooked chickpeas, tahini, garlic, paprika and salt with water and food processor to  make paste.

  • Squeeze the lime. Squash the avocado with a fork, then blend with lime juice, olive oil, salt and pepper.

Breads and cakes made using Japan-produced rice flour have a texture when baked that is crunchy on the outside and springy on the inside, and its faintly sweet aroma is also to be enjoyed. Rice flour produced using Japan’s highly original milling technology is characteristically unlikely to clump up, and is easy to handle.
