Yuzu Pie

Recipe

Inspired by lemon pie, this recipe uses yuzu instead of lemon. This dish offers a perfect harmony of sourness and sweetness.

Ingredient 4 servings

For tart

  • Pastry flour 300g
  • Butter 150g
  • Icing sugar 70g
  • Cinnamon 5g
  • Egg yolk 2U
  • Salt 0.5g

For yuzu syrup

  • Yuzu juice 275ml
  • Sugar 75g
  • Egg yolk 2U
  • Cornstarch 25g

For merange

  • Sugar 150g
  • Water 36ml
  • Egg white 2U
  • Cream of tartar 1g

Cut the butter in cubes. Mix with flour until a floury texture.

Add powdered sugar, cinnamon, egg yolks and salt and knead. Create an iron and film. Book in cold 1h.

After time, flour the table and spread the dough between two cooking sheets with a roller. Place in the mold and stretch on the sides.

Bake in a preheated oven at 180ºC for 15 minutes, until gold

Put the juice, yolks, sugar and cornstarch in a saucepan and heat atr medium-high heat and heat stirring for 5-10 minutes. Once thick, remove from the heat and store in the refrigerator for at least 2 hours.

Make syrup with sugar and water: place on the heat until 118ºC

Place the egg whites in a bowl that holds the heat with the cream of tartar. Beat until almost fully mounted. Add the syrup in the form of yarn and beat until firm peaks. Leave resting for 2 minutes.

Squeeze out the yuzu syrup in the pie. Decorate with meringue and make scorch marks on meringue using a torch burner if you favor to.
