We serve carefully-selected Matsusaka Ito beef, the highest-ranking A5 rank beef in Japan. Our beef is shipped directly by refrigerated air freight and carved caerfully at our restaurant. We select the optimal carving method, seasoning, and cooking time depending on the fat content and characteristics of each cut of wagyu beef.
