Junmai Daiginjo features rice polished to at least 50%, resulting in a refined sake with delicate floral and fruity notes. This meticulous process yields a smooth, elegant drink that highlights the purity of the rice. Best enjoyed with Echizen crab, especially when following the traditional Japanese practice of kora sake, where the sake is poured into the crab shell for a unique flavour experience.
Mildly flavoured shellfish, like crab.
Because it is produced using highly polished rice and meticulous brewing methods, it is one of the more elegant and refined types of sake.
Junmai Daiginjo was traditionally reserved for special occasions and esteemed guests, reflecting the high value placed on the drink
Opt for Junmai Daiginjo with subtle, refined shellfish dishes such as poached lobster or steamed crab.
