SAKE PAIRING MENU

Lobster cured in konbu for 24 hours, grilled gently over bincho charcoal, with a bed of finely sliced hispi cabbage cooked in dashi, paired with Aiyama Junmai Ginjo from Nanbubijin Sake brewery (Iwate Prefecture).

Thinly sliced pickled onion carefully laid on top of a quenelle of lobster claw seasoned with its own coral and house-fermented gooseberry boshi, paired with Daishichi Minowamon Kimoto Junmai Daiginjo from Daishichi Sake Brewery (Fukushima Prefecture).
