SAKE PAIRING MENU

Japanese style sea bass with a dill and samphire sauce, with chanterelle mushrooms and a crispy sea bass belly nem. Paired with Seitoku “Trapeza“ Junmai Ginjo from Seitoku Brewing Company (Gunma Prefecture).

Marinated sardines with pickled mustard seeds, fennel, uozo and caviar. Paired with Akitabare Daiginjo from Akitabare Suirakuten (Akita Prefecture) or Tedorigawa “U” Junmai from Yoshida Sake Brewery (Ishikawa Prefecture).
