Studio Gauthier
Studio Gauthier is Alexis Gauthier's exciting new restaurant, situated alongside the new 123V Bakery at BFI Stephen Street. For a while now the team at Gauthier has wondered about a place where people could come and enjoy our dishes in a more relaxed setting. Somewhere you could round up a group of friends at the last minute and and share a booth, order cocktails, have your Gauthier classics and favourites, share dishes and try the newest, latest developments in plant-based cooking from the Gauthier team.
Sake Pairing Menu
Promotional Period: 11February – 25 February
Dish: Smoked and grilled kohlrabi, served with a kaffir lime beurre blanc with caviar, green apple, and seaweed oil
Sake: KEIGETSU “Gin no Yume” Junmai Daiginjo
Pairing: Junmai Daiginjo represents the highest level of sake production, requiring the strictest milling standards, with at least 50% of the rice polished away. This meticulous process results in remarkable purity and finesse. In this bottling, those qualities are expressed through delicate notes of citrus, jasmine, and lychee. Traditionally, this sake pairs well with beef, bone marrow, or grilled meats. However, I chose to take its finesse and acidity in a different direction, into my own world of vegan cuisine. I strongly believe that vegetables offer a lighter, fresher, and more vibrant pairing, especially when working with sea-inspired flavours, bright aromatics, and citrus accents.
