About the Sake brewery:
Echigozakura Shuzo specializes in ginjo sake, crafting 10,000 koku annually through a unique brewery design. Their method involves slow, low-temperature rice preparation, resulting in Niigata's signature mild, mellow sake.
Founded in 1890 as Shirai Shuzo in Suibara Town (now Agano City), it thrived amidst the natural splendor of Gozu Mountains and the Agano River. Joining Sekaitaka Koyamaya Group in 1993, the brewery underwent a comprehensive 2009 renovation, preserving a century-old legacy while embracing cutting-edge equipment.
Honoring traditional brewing techniques, Echigozakura masters ginjo sake, demonstrating over a century of brewing expertise nurtured in nature's embrace.
