Mantis shrimps are packed with umami and rich flavour in itself. For this dish, it is lightly poached in a crustacean stock and finished over hot coal to achieve an additional smoky flavour. Served in a bed of homemade nam pla prik (chilli and fish sauce) and gingerflower to create a perfect tango of heat, sweet, tang and salt.

Pla Rad Prik

Monkfish, though typically known as "the poor man's lobster" in Thailand, has a unique and succulent texture. By dry-ageing a monkfish, it will enhance its sweetness and tenderise the flesh. Upon wrapping the fish in seaweed noodles, the dish is topped with a dash of aromatic oil infused with garlic, ginger and lemongrass, and served with fermented chilli sauce to tie all the elements together.

Chef Miller Mai, who heads the kitchen at Khiri, brings a wealth of experience in translating familiar flavours with creativity. He first earned his stripes at age 13, assisting his father in the family’s tze char restaurant – gathering vital knowledge of what seduces diners’ palates and bellies. His two decades of experience spanning Chinese, French, Italian and Japanese cuisines across Singapore includes stints at Tippling Club and Open Farm Community. His judicious use of contemporary kitchen techniques are witty, fun and seriously good.
