I always structure my menus around 'dashi', so I feel that traditional Japanese koji is an inseparable part of my menus and is the essence of 'umami' (flavour). In order for the locals to understand the season of the Japan and the authentic flavor and deliciousness, we are particular about all Japan ingredients and carefully prepare the dishes, including seasonings.
