At 7pm, savour SHICHIJI, an effervescent sake evoking sweet-and-sour fruit tones. Its balanced blend of sweetness and umami culminates in a light, dry finish—a perfect start to any celebration! This sake undergoes secondary bottle fermentation, akin to champagne, lending it a slightly cloudy appearance from fine rice grains and yeast.
Discover scents of rice flour, mochi, and lactic creaminess, accented by subtle soy sauce notes. On the palate, relish hints of lemon curd sweetness, lychee, and a touch of lemongrass. HINEMOS took root in 2019, deriving its name from an ancient Japanese phrase, meaning "a whole day". Recognizing the diversity of drinking occasions and the nuanced preferences at different times of the day, the brewery believes in crafting the perfect alcoholic beverage for each moment.
