Crafted from JAS-certified organic Gohyakumangoku rice since 2019, this Junmai Ginjo matures for three years to emerge in a pale yellow hue. Inhale its sweet, floral aroma tinged with green apple freshness and melon-like notes, shifting to a subtle cashew-nut savoriness—balancing youthfulness and maturity.

Sip its soft, elegant sweetness merging with a lingering almond-like bitterness, complemented by a revitalizing acidity. The fruity bouquet lingers through the finish. Enjoy chilled or at room temperature, or warmed to accentuate acidity and depth for an experience of the full potential of the JAS-certified organic rice, as well as its youthful energy and maturity.

The packaging echoes the sake's aromatic richness and sun-kissed rice, adorned with a Czech glass (Vinolok) cap.

About the Sake brewery:

Established in 2017, the Noguchi Naohiko Sake Institute honors the esteemed brewer, Noguchi Naohiko. It serves as an apprentice ground for Toji, guided by Noguchi Toji, revered as "The God of Sake" for his 75-year career.

Unlike family-run breweries, this institute revolves around one Master Brewer, showcasing Noguchi's expertise. Its name pays homage to his industry eminence. Mr. Noguchi purpotedly came out of retirement to spearhead this project.

Noguchi Toji, aged 92, began brewing at 27, amassing 27 Gold Medals at the Japan Sake Awards and the prestigious Yellow Medal of Honor from the Emperor of Japan.
