Pasteurized once, this sake matures gracefully and is best stored in a refrigerator. It's produced by Minenoyaki Brewery in Kitakata Hiroshima, in collaboration with Nihon University's Lohas engineering division in Koriyama, Lohas, to promote a health-conscious and sustainable lifestyle. The farming of the rice used in this sake involves the introduction of trained ducklings into rice fields. Their role in controlling weeds and insects eliminates the necessity for chemical use in both the crop and soil.
About the Sake brewery:
Lohas Sake is a collaborative venture between Bond & Co and Minenoyuki Brewery. Founded in 1945, Minenoyuki started out as Kitakata's youngest sake brewery, an offshoot of Yamatonishiki. Originally serving as the second facility for the Yamatonishiki brewery, it focuses on producing light and approachable sake. The brewery is currently developing new beverages like "Mead Sake" and the "Hatsuyukisou" series.
Bond & Co utilizes a distinctive duck farming method, introducing trained ducklings to rice fields to naturally control weeds and insects without chemical intervention. This approach, combined with homemade organic fertilizer, yields 'aigamo saibaimai', a rice variety used in LOHAS Sake.
