Yuichi Tanaka's brainchild, Kamonishiki Nifudazake Junmai Daiginjo Kisuisen, reimagines traditional sake for the modern age. With a modest 13.5% alcohol content, it proudly highlights the revered Omachi sake rice. This full-bodied brew reveals refreshing floral notes and a delightful effervescence on the palate.
Named Kisuisen, meaning "Daffodil," it signifies new beginnings. Among Yuichi Tanaka's first creations at 24, it mirrors his budding journey into sake brewing. Much like the daffodil's symbolism of renewal, this sake represents Tanaka's early foray into brewing, marking a promising start to his illustrious career.
About the Sake brewery:
At Kamonishiki brewery, Yuichi Tanaka Toji, who was appointed head brewer at 23, is on a quest to brew exquisite sake appealing to modern, diverse palates. He devotes hours daily to tasting and studying renowned brands, decoding sought-after sake traits.
Established in Niigata Prefecture's Kamo city in 1893, Kamonishiki defies Tanrei Karakuchi, the distinctively clean and bone-dry style of sake the region is known for. Instead, the brewery crafts elegant, fragrant sake, shunning a heavy alcohol presence. With his youthful ambition, Tanaka is pioneering contemporary sake that breaks boundaries.
