At the stroke of 1:00 am, indulge in ICHIJI, a mellow dry sake crafted late nights. Characterized as clear water white, it delivers concentrated richness, offering a bittersweet taste blending acidity with umami when chilled. At room temperature, a nutty aroma amplifies, while a gentle warmth sharpens its essence. Scents of steamed rice, white flowers, and subtle spices like cumin and paprika entice. Its soft, light texture hints at ripe banana and grapefruit skin, finishing with zest.

HINEMOS took root in 2019, deriving its name from an ancient Japanese phrase, meaning "a whole day". Recognizing the diversity of drinking occasions and the nuanced preferences at different times of the day, the brewery believes in crafting the perfect alcoholic beverage for each moment.

The minds behind HINEMOS aren't concerned about unfamiliar Japanese sake terms like Daiginjo, Honjozo, or Ginjo.
