About the Sake brewery:
Established in 1899, Tanabe Shuzo thrives in Eiheiji town, Fukui prefecture. Led by the Tanabe brothers, the brewery shares kinship with the renowned Kokuryu Sake brewery, located in the same town. Tanabe Shuzo specializes in small-batch production, with its brewing season beginning in the intense chill of winter.
A distinctive tradition is their use of charcoal fires to steam rice, a rare practice due to its time-consuming nature, taking over two hours to generate steam in the early morning. Using labor-intensive brewing methods, they exclusively utilize the fune and shizuku techniques for pressing sake, they solely employ the fune and shizuku methods for pressing sake, reflecting their commitment to traditional craftsmanship.
