About the Sake brewery:
"Niwa no Uguisu" is the flagship sake of Yamaguchi Sake Brewery, located in Kurume City, Fukuoka Prefecture. The brewery was founded in 1832 during the late Edo period, when Toshichi, the fifth generation of the Yamaguchi family, then merchants and major landowners, received permission from the Kurume domain to begin brewing sake. The name "Niwa no Uguisu" (Bush Warbler of the Garden) originates from the Tenpō era, when bush warblers from nearby Kitano Tenmangu Shrine would visit the family’s garden well daily to drink pure spring water and bathe. This same pristine water continues to nurture their sake today.
