Created to commemorate the reopening of Dogo Onsen’s historic main building, this Junmai Daiginjo embodies renewal and refined elegance. It opens with a delicate fragrance of fresh fruit, followed by a soft, rounded sweetness that is best savoured chilled. Labelled Nakagumi, or “middle take,” it represents the finest portion drawn during pressing, prized for its clarity, balance, and purity. The bottle design depicts an egret rising from the bathhouse in the glow of dawn, a poetic symbol of new beginnings. Crowned with a Gold Medal at the 2025 Fine Sake Awards, this sake unites tradition, artistry, and celebration.
