Fermented with CEL24, a yeast unique to Kochi, it exemplifies a modern approach to Japanese sake, offering both originality and finesse. Its expressive character pairs beautifully with Western cuisine, enhancing flavours without overpowering. Celebrated for its innovation, it received multiple awards in 2019, reflecting its creative style and the skillful craftsmanship behind every bottle.
About the Sake brewery:
For 138 years since its establishment in 1877, Tosa Brewery has been brewing quality sake. Nestled in northern Kochi Prefecture, also known as "Tosa-Reihoku region," the brewery thrives on pure mountain air and abundant water. Tosa-cho, surrounded by Sameura Lake's tranquility, serves as its haven. From this serene water source in Shikoku, the Yoshino River meanders eastward. Here, amidst this picturesque landscape, Tosa Shuzo handcrafts limited sake batches, using the region's premium soft water.
