After three years of R&D, this Junmai sake was crafted specifically to pair with oysters, using a special yeast strain to increase malic acid levels. This results in a juicy acidity that refreshes the palate after eating oysters. The sake's sweetness adds a denser, bolder flavour that complements various seafood like crabs and lobsters. It is clean and relatively dry, with light acidity and rich umami, making it an ideal companion for oysters. Imayo Tsukasa Sake Brewery's origins trace back to an inn and sake shop in Niigata, a city that rivaled Edo in population and prosperity during the late Edo and early Meiji periods. As one of Japan's three geisha capitals, Niigata's cultural significance persists to this day. Since the mid-Meiji era, Imayo Tsukasa has focused solely on sake brewing. The brewery benefits from Niigata's fertile soil and the clean waters of the Agano River.
