About the Sake brewery:

Founded in 1873 in Miyagi Prefecture, is renowned for its innovative approach to modern sake. Committed to crafting sakes that complement food, Niizawa focuses on crisp, clean flavours and balanced acidity, creating drinks that enhance a meal without overpowering it. A highlight of their modern projects is the Heaven Sake “Noir” collaboration with French cellar master Régis Camus. Drawing on his expertise in Champagne assemblage, Camus helped blend Niizawa’s Junmai Daiginjo batches to achieve remarkable complexity and harmony. This fusion of Japanese brewing and French blending techniques has produced a versatile, internationally acclaimed sake.
