Petai Miso Hokkaido Scallop Risotto

Hokkaido scallops are first cured in salt, kōji (fermentation culture) and kombu before going on the grill on one side to preserve its sweetness and semi-raw texture. Served on top of koshihikari rice cooked with homemade petai miso and petai miso dashi, drizzled with shiso oil and orange segments to complement the gentle yet savoury citrus notes of the sake.

Soto River Prawn Shirataki Noodles

A river prawn cooked on the grill along with tomalley from its head, served with shirataki (konjac) noodles on a bed of homemade soto sauce made from turmeric, kaffir lime leaves, lemongrass, galangal and all the aromas of Southeast Asian cuisine. This rich prawn dish lends itself to a great pairing for an umami laden Junmai Daiginjo sake.

Predominantly Asian fusion, Morsels’ cuisine is innovative and progressive. Award-winning chef and owner of Morsels, Petrina Loh, frequently seeks out fellow artisans such as winemakers, farmers and sauce makers to bring something unique into the menu. Back in 2013, Morsels started off as a casual wine bar with small sharing plates. Upon moving into a cosy and rustic cottage in Dempsey Hill, Chef Petrina has been sharing her love for food, wine, sake and greenery with her guests.

Owner Chef Petrina Loh

Chef Petrina is a former private banker turned award-winning female chef-owner in Singapore. At age 29, she was formally trained in California at Le Cordon Bleu. She further honed her skills at various Michelin-starred establishments before returning to Singapore in 2012 when Morsels was opened. She is known for specialising in homemade fermented sauces and sourcing fresh ingredients – all while playing a part for the environment with a zero-waste policy and sourcing ingredients that are sustainable.
