This Junmai Daiginjo sake is a quintessential ginjo, polished down to 50% using 100% Hyogo-grown Yamada Nishiki rice. Designed as a central item in the Tatenokawa lineup, it boasts a rich, full-bodied flavour and a distinctive floral aroma that blooms upon pouring. The use of Yamada Nishiki, the king of sake rice, delivers robust umami and a long, satisfying finish. About the Sake brewery:
Founded in 1832, Tatenokawa was named 'Castle Brook' by the local Shonai Clan lord. Under the leadership of 6th generation president Sato Junpei, a young team aims to produce Japan's finest sake. In 2008, Sato made the bold decision to focus exclusively on Junmai Daiginjo, the highest grade of sake. This strategy, aimed at creating more accessible and quality-focused sake, has rapidly boosted Tatenokawa's reputation. Their ambitious '100-year vision' is to brew Japan's top sake, a goal they've arguably achieved with their 1% polished sake, Komyo.
