Tatenokawa Junmai Daiginjo Seiryu, meaning “clear stream,” is a refined sake from Yamagata’s first brewery dedicated solely to Junmai Daiginjo. Made with locally grown Dewasansan rice polished to 50%, it offers elegance, clarity, and approachability. At 14% alcohol, Seiryu is gentle and light, allowing the rice’s natural sweetness and fragrance to shine. The aroma is fresh and inviting, with hints of melon, pear, and subtle florals. The palate is soft yet lively, balancing gentle acidity with fruit-forward sweetness, culminating in a clean, lingering finish. Its smooth texture and purity make it perfect for both new and seasoned sake enthusiasts.
About the Sake brewery:
Founded in 1832, Tatenokawa was named 'Castle Brook' by the local Shonai Clan lord. Under the leadership of 6th generation president Sato Junpei, a young team aims to produce Japan's finest sake. In 2008, Sato made the bold decision to focus exclusively on Junmai Daiginjo, the highest grade of sake. This strategy, aimed at creating more accessible and quality-focused sake, has rapidly boosted Tatenokawa's reputation. Their ambitious '100-year vision' is to brew Japan's top sake, a goal they've arguably achieved with their 1% polished sake, Komyo.
