About the Sake brewery:
Founded in 1550, Konishi Brewing is the oldest sake brewery continuously owned by the Konishi family. Located in Hyogo Prefecture, a key sake-producing region, the family began brewing sake in Itami as a side business to selling medicine. They accidentally discovered clear sake when ash was mistakenly added to a fresh batch. As Itami's significance as a sake-brewing region grew in the late 16th and 17th centuries, especially after the capital moved to Edo (now Tokyo), the Konishi family launched a shipping company to transport their sake directly. Known for adopting new technologies, they remain popular today, with their flagship brand Shirayuki and the namesake Konishi brand introduced in 2012.
