KOKURYU SAKE BREWING

Crafted by Kokuryu Sake Brewing in Fukui Prefecture, this sake reflects the purity and elegance of its birthplace. The name, meaning “Nine-Headed Dragon,” honours the legendary river whose snowmelt waters nourish the brewery. This pristine water, combined with Gohyakumangoku rice polished to 65%, creates a sake of refined balance and clarity. At 14.5% alcohol, with an SMV of +5.5, it is light-bodied yet layered, offering delicate notes of papaya, melon, cucumber, and pistachio. Whether enjoyed chilled for a refreshing lift or gently warmed for rounded umami, it pairs beautifully with seafood, grilled dishes, and seasonal vegetables.

About the Sake brewery:

Since 1804, Kokuryu Sake Brewing has been brewing sake in the mountains of Fukui, guided by the principle that quality will garner support. Located near the Soto Zen temple Eiheiji, between snowy peaks and the Sea of Japan, Kokuryu is one of the few remaining breweries in this ancient region. From growing rice to selecting special yeasts, the company maintains control over its production process. Kokuryu's commitment to excellence is evident in its small-batch approach, focusing on producing only the highest-quality sakes. This dedication to craftsmanship has allowed Kokuryu to preserve its heritage while continuing to produce superior sake.
