Hakkaisan Junmai Daiginjo

HAKKAISAN BREWERY

A distinguished sake from Niigata Prefecture, celebrated for its light, clean and crisp tanrei karakuchi style. Brewed with Yamada Nishiki rice polished to 45% and pure snowmelt spring water from Mount Hakkai, it reflects the clarity of the region’s natural environment. Meticulous hand-crafted koji and slow, cool fermentation create remarkable delicacy and balance. Subtle aromas of flowers and gentle fruit lead into a silky palate, where refined rice notes and a refreshing dryness linger. Elegant and versatile, it pairs beautifully with sashimi, white fish, delicate vegetables and even refined Western cuisine.

About the Sake brewery:

Hakkaisan Brewery is dedicated to crafting sake that is full of flavour, yet never overwhelms the palate. Their philosophy centres on creating brews that complement meals effortlessly while remaining enjoyable sip after sip, allowing for hours of drinking without fatigue. Drawing on the pristine waters from the snow-capped Mount Hakkai and using carefully selected rice varieties, the brewery combines tradition and meticulous craftsmanship to produce sake that is both elegant and approachable. Every bottle reflects Hakkaisan’s commitment to balance, refinement, and consistency, offering a drinking experience that highlights the natural harmony between sake and food.
