DAISHICHI SAKE BREWERY
A distinguished Junmai Daiginjo crafted with the traditional kimoto method and Yamada Nishiki sake rice, polished with Daishichi’s pioneering super-flat rice polishing technique. This breakthrough eliminates the subtle off-flavours that once remained in even the finest Daiginjo rice, creating an exceptionally smooth and mellow texture with remarkable delicacy. Its natural, elegant aroma is equally refined. The grains become almost transparent through this unique polishing, a method now exclusively used across all Daishichi products. Minowamon has received gold medals at the Tohoku Sake Awards and international acclaim at Vinexpo in France and leading restaurants in New York.
About the Sake brewery:
Established in 1752 during the Hōreki period, Daishichi Sake Brewery has maintained a strict adherence to the traditional kimoto brewing method. Renowned for their rich, mellow sakes, Daishichi's offerings showcase the best of kimoto sake. The Ohta family, originally from the old Ise province, founded the brewery in Nihonmatsu, and it is now led by the 10th generation.
